The bell pepper is an excellent vessel for stuffing meat, rice, and, of course, cheese. It's strong enough to hold its shape in the oven, and the flavor is subtle enough to go well with just about. Stuffed bell peppers are a classic comfort food with rice, ground beef, a few savory seasonings, topped with tomato sauce. Growing up, this was one of my favorite meals. Now that I'm an adult, it's one of my go-to recipes whenever I need something quick, easy, and delicious!
