I used Goya yellow rice and broccoli. I accidentally opened a can of diced tomatoes with green chilies. Add tomatoes, breaking up with a wooden spoon. Stewed Chicken with Okra and Tomatoes.

  1. Boil chicken for 20minutes,add curry,onion,salt,knorr seasoning and bay leaves..
  2. Select the chicken out pour dry red pepper and curry on it and place in the oven tray for 10mins.turn both sides to grill..
  3. Parboil rice for 12minutes,boil it again and add salt and cover to boil.turn off the heat when is soft and dry..
  4. Blend the fresh tomatoes,fresh pepper and tatasi(remove the seeds),onion,ginger and garlic..
  5. Boil all the blended paste till all the water evaporates.heat up vegetable and pour sliced onion.slice the onions in big rings..
  6. Fry for 30seconds,add curry,thyme and pour in the tomatoes paste and fry..
  7. Fry for 8minutes,pour in the chicken stock and boil then add salt,knorr seasoning and boil for 4 minutes.the tomatoes sauce is ready..

Place the chicken back on and cover in chopped tomatoes. Add chicken stock and more cajun spice (to taste). If you pre cook the rice, you won't need as much chicken stock. Mine came out a bit watery. This was really really good, I didn't have any chopped tomatoes but I had stewed tomatoes.
