Ingredients of Colourful Khoya Zarda

  1. It's of Sela rice 1/2 kg soaked for 4 hours.
  2. Prepare 1/4 tsp of Zarda color.
  3. It's 6 of Green cardamom.
  4. It's 1/4 tsp of Salt.
  5. Prepare Cloves of 6.
  6. Prepare 1 tbsp of Orange peel.
  7. You need 1/2 kg of Sugar.
  8. Prepare 1/2 cup of Ghee.
  9. It's 1 tbsp of Kewra water.
  10. You need of Khoya or Barfi 1 pao.
  11. Prepare of Ashrafis red and green 1/2 cup chopped.
  12. It's 125 gm of Gulab jamun.
  13. It's of Silver waraq 2 roll(optional).

Zarda is the most famous Dessert in Pakistan specially Punjab. I have posted two types of zardas before, this recipe is not different in method which i have mentioned before but taste is different and rich because of khoya. Aside from it's gorgeous hue and it's colourful speckling of nuts and raisins, Zarda is definitely a favourite in my house due to how delicious and satisfying it is after a salty and spicy meal.

Colourful Khoya Zarda instructions

  1. Soak sela rice for 4 to 5 hours, in a pan boil water with yellow color, salt, cloves, green cardamom crushed and orange peell..
  2. Cook rice till fully done, drain and keep aside..
  3. In a pan heat 1/2 cup ghee add sugar with 1/2 cup water, keep stirring till boiling and sugar dissolves completely,.
  4. Add in the boiled rice, mix well, cook on high flame uncovered for 10 minutes till water dries then lower flame and leave it on dum over a tawa for 15 minutes..
  5. Add kewra water,take out in a large platter serve garnished with shrafis, khoya, gulab jamun..

Zarda is derived from the Urdu word "zard" meaning yellow, since yellow is the dominant color of rice after it is cooked and ready to be eaten and when other colors are added, it can easily be referred to as rainbow sweet rice. Usually, it is served as a dessert to bring a sweet flavor in the mouth after meals. Some people also add khoya or mawa once the Zarda is cooked which also adds delicious flavour to the zarda. Another variation of Zarda is Muntanjan, which is basically fully loaded zarda.
